TURMERIC-GINGER SOUP

IT’S QUITE LITERALLY THE PERFECT SOUP FOR WHEN YOU ARE FEELING A BIT UNDER THE WEATHER.

ingredients

11/2 pounds (680 g) carrots, peeled and chopped

1 pound (450 g) sweet potatoes, peeled and chopped

1 yellow onion (about 8 ounces, or 225 g), chopped

1 (1-inch, or 2.5 cm) knob fresh ginger, peeled and sliced

1 (1-inch, or 2.5 cm) knob fresh turmeric, peeled and sliced

11/2 quarts (1.5 L) Bone Broth

1 cup (240 ml) full-fat coconut milk

Fine sea salt, to taste

5 (2-cup, or 480 ml) servings

directions

1. Place the carrots, sweet potatoes, onion, ginger, turmeric, and Bone Broth in a large stockpot.

2. Bring to a boil over high heat. Reduce the heat to medium and cook, covered, for about 20 minutes, until the vegetables are tender.

3. Remove from the heat and blend with an immersion blender until smooth.

4. Stir in the coconut milk and season to taste with sea salt.

THIS SOUP WILL KEEP FOR UP TO 5 DAYS, STORED IN AN AIRTIGHT CONTAINER IN THE REFRIGERATOR.
